Ratatouille

All those tired-looking vegetables lurking in my fridge got chopped up and chucked in a pot today.
~ A year ago today I had steak and salad for lunch ~

    I love fried eggplant! Yummy. A big fan of zucchini, too. Just made zucchini boats last night to go with hubby's roasted chicken.
    I only ate the Z-boats. Was really good.
